Lab was easy, but still not really sure what I did and why the code couldn't have been automated or like a Jupyter Notebook with instructions.

This is pretty misleading. No jobs are actually submitted to dataflow, rather we just use the cloud shell to run the jobs in a terminal. This doesn't really show how dataflow can be used in a deployed environment
