Labs should not require you to download/install (RDP) software in order to complete them, not everyone has the access to do that on the machine they use for the lab. Other labs are fine as everything can be done with Cloud Shell and via SSH, but this lab is not the case.

IAP Desktop is not available for mac. Your lab shouldn't be dependent on an outside tool that isn't OS agnostic.
