Works as suggested by another critic (add `--image-version=composer-1.20.11-airflow-1.10.15` to the create command).

This lab is broken. I had to figure out how to set some of the permissions. The airflow variables command is wrong. I believe I figured it out with the documentation. Once I trigger the dag to run, I received an error about invalid arguments to pubsub within the dag code.
