In my opinion, the 90-minute timeframe for this lab is insufficient. The propagation of Istio resources (VirtualServices and DestinationRules) requires a considerable amount of time. Furthermore, there is a significant lag in the 'Traffic' view updates, and performing a thorough analysis of the Fortio output logs takes additional time that isn't currently factored in.
