docker run -it -e PROJECT=$PROJECT -v $(pwd)/dataflow-python-examples:/dataflow python:3.7 /bin/bash isn't passing the environment variable to the docker container. You have to run `export PROJECT=[Insert Your GCP Project ID here]` in order to make the lab work correctly. Also having images of what the output should look like in the console would help students as well.
