Suggestions: For GCP in 2023, I think you use Project ID, not project number. For IAM, it's no longer "New" it's "Grant Access" for "To create a dataset, click Create dataset (Create dataset icon)." might want to clarify as there's a visible "Create Dataset with SQL" button at the top. Also, there's a process that has to complete at this step. It's quick but you should wait for it. Step "To convert the productSKU column type to a string data type, open the menu to the right of the productSKU column by clicking Down arrow icon, then click Change type > String." is embedded in a sequence of Q&A, it's really easy to miss. Step "In the Publishing Actions section, hover over on Create-CSV then click Edit." - the Edit button is on the far-right, not immediately obvious given the description.
