"curl -i -k -X GET https://eval.example.com/retail/v1/categories" must be changed with "curl -i -k -X GET https://eval.example.com/retail-v1/categories". Because when I run the first command it gives 404. But the second command gives 200 OK status and list the categories

Learners should be allowed to make an API call from any REST client post set up of API proxy using openAPI spec. As of now we have to log in to a VM and them make an API call. This step doesnot give the feel of really setting up an API proxy. Ideally I would have loved to make an API call using postman once the proxy is set up.
