I wish it had explained the structure of the app bundle, the hooks -- especially the relationship between appspec.yml and the corresponding "./scripts/*" files.

There was an additional step in the Amazon GUI not mentioned in the lab which cost me a lot of time again - Step 2 with Blue/Green Configuration.

Your steps are wrong. Step 10 says to skip the Instance Settings page. In order to do this, I had to select the "In-place deployment". Your instructions make no mention of that. Then after skipping, you get a "Proceed to Step 4" button instead of a 3.

The steps need changing slightly because there's now the Blue/Green deployment option and you need to select the other option instead.
